It's not really clearly defined, but traditionally we include activities such as cooking, trade, farming, making anything physical - generally anything requiring physical work.

Technically it goes from sunset the day before to sunset today, although we only fast during daytime hours. Our meal the night before is rather simple.

On most days, the grounds here would be full of activity, with monks training, tending the gardens, or so on.

But I have found as a general rule I have the grounds to myself on the day of rest. Although Beacon I found likes to join me.
